Ingredients
  

  • 3 large very ripe bananas
  • 2 cups old-fashioned rolled oats
  • 1/2 cup creamy peanut butter
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup mini chocolate chips optional
  • 1/3 cup chopped walnuts or pecans optional

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Line an 8 × 8-inch baking pan with parchment paper and lightly grease the exposed sides.
  3. Place the ripe bananas in a large mixing bowl and mash thoroughly with a fork.
  4. Add the peanut butter, eggs, milk, maple syrup, and vanilla. Whisk until well combined.
  5. Add the rolled oats, cinnamon, baking powder, and salt. Stir until evenly combined.
  6. Fold in the chocolate chips or chopped nuts if using, reserving a small amount for the top.
  7. Transfer the mixture to the prepared baking pan and spread into an even layer.
  8. Scatter the reserved chocolate chips or nuts over the surface.
  9. Bake for 25–30 minutes, until the edges are lightly golden and the center is set.
  10. Allow the bars to cool in the pan for at least 15–20 minutes.
  11. Use the parchment paper to lift the baked oatmeal from the pan.
  12. Cut into 9 bars and serve.
