Ingredients
  

  • For the BBQ Chicken:
  • 1 1/2 pounds boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 3/4 cup barbecue sauce
  • For the Bowls:
  • 3 cups cooked rice
  • 1 can 15 oz black beans, drained and rinsed
  • 1 1/2 cups corn kernels
  • 3 cups chopped romaine lettuce
  • 1 cup cherry tomatoes halved
  • 1 large avocado sliced or diced
  • 1/4 small red onion thinly sliced
  • 1/2 cup ranch dressing
  • 1 lime cut into wedges
  • Fresh cilantro optional
  • Extra barbecue sauce optional

Method
 

  1. Pat the chicken breasts dry and pound or slice them to an even thickness if necessary.
  2. Combine the smoked paprika, garlic powder, onion powder, salt, and black pepper.
  3. Season both sides of the chicken with the spice mixture.
  4. Heat the olive oil in a large skillet over medium-high heat.
  5. Add the chicken and cook for approximately 5–7 minutes per side, depending on thickness, until browned and the internal temperature reaches 165°F (74°C).
  6. Reduce the heat to medium-low.
  7. Brush or spoon the barbecue sauce over both sides of the chicken.
  8. Cook for another 1–2 minutes until the sauce becomes sticky and lightly caramelized.
  9. Transfer the chicken to a cutting board and rest for 5 minutes.
  10. Meanwhile, prepare the rice, black beans, corn, lettuce, tomatoes, avocado, and red onion.
  11. Slice the rested BBQ chicken into strips.
  12. Divide the rice among four bowls.
  13. Add the black beans, corn, lettuce, tomatoes, avocado, and red onion.
  14. Arrange the sliced BBQ chicken over each bowl.
  15. Drizzle with ranch dressing and additional barbecue sauce if desired.
  16. Finish with cilantro and fresh lime juice.
  17. Serve immediately.
