Pat the chicken dry and cut it into bite-sized pieces.

Toss the chicken until evenly coated and cook for another 1–2 minutes.
Prepare or reheat the rice and fluff it with a fork.
Chop the lettuce, halve the tomatoes, prepare the corn, slice the avocado, and slice the green onions.
Divide the rice between four bowls.
Top with Buffalo chicken, lettuce, corn, tomatoes, avocado, and shredded cheddar.
Drizzle lightly with ranch or blue cheese dressing.
Finish with sliced green onions and additional Buffalo sauce if desired.
Serve immediately.
