Ingredients
  

  • For the Chicken:
  • 1 lb boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the Lunch Boxes:
  • 1 cup hummus
  • 2 large pita breads cut into wedges
  • 1 large cucumber sliced
  • 1 cup cherry tomatoes
  • 2 cups fresh strawberries blueberries, or other preferred fruit

Method
 

  1. Pat the chicken breasts dry.
  2. Rub with olive oil and season both sides with garlic powder, paprika, salt, and black pepper.
  3. Heat a skillet over medium heat.
  4. Cook the chicken for approximately 5–7 minutes per side, depending on thickness, until the internal temperature reaches 165°F (74°C).
  5. Transfer to a cutting board and rest for 5 minutes.
  6. Allow the chicken to cool before slicing into strips or bite-sized pieces.
  7. Slice the cucumber and prepare the tomatoes and fruit.
  8. Cut the pita bread into small wedges.
  9. Divide the hummus between four small leak-resistant compartments.
  10. Divide the cooled chicken between four lunch boxes.
  11. Add pita wedges, cucumber, tomatoes, and fresh fruit to separate compartments.
  12. Cover and refrigerate until needed.
  13. Pack with a frozen ice pack in an insulated lunch bag when refrigeration is unavailable.
