Ingredients
  

  • 1 cup cottage cheese
  • 3 large eggs
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 tablespoons milk plus more if needed
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup or honey
  • 1/4 teaspoon ground cinnamon optional
  • 1/4 teaspoon salt
  • Butter or neutral oil for cooking
  • Fresh berries for serving
  • Maple syrup for serving
  • Greek yogurt optional for serving

Method
 

  1. Add the cottage cheese, eggs, milk, vanilla extract, and maple syrup to a blender.
  2. Blend briefly until mostly smooth.
  3. Add the flour, baking powder, cinnamon, and salt.
  4. Pulse just until combined. Avoid overmixing.
  5. Allow the batter to rest for approximately 5 minutes.
  6. Heat a nonstick skillet or griddle over medium-low to medium heat and lightly grease with butter or oil.
  7. Pour approximately 1/4 cup of batter onto the skillet for each pancake.
  8. Cook for 2–3 minutes, until the edges begin to set and bubbles appear on the surface.
  9. Carefully flip each pancake and cook for another 1–2 minutes until golden and cooked through.
  10. Repeat with the remaining batter.
  11. Serve warm with fresh berries, maple syrup, Greek yogurt, or your favorite pancake toppings.
