Cozy No-Bake Peanut Butter Energy Balls

Soft and chewy no-bake peanut butter energy balls made with rolled oats, creamy peanut butter, honey, flaxseed, and mini chocolate chips. An easy make-ahead snack that requires no oven.

Ingredients
  

  • 1 cup old-fashioned rolled oats
  • ½ cup creamy peanut butter
  • cup honey
  • ¼ cup ground flaxseed
  • cup mini chocolate chips
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon fine salt

Method
 

  1. Add peanut butter, honey, and vanilla to a medium mixing bowl and stir until smooth.
  2. Add rolled oats, ground flaxseed, cinnamon, and salt.
  3. Stir until thoroughly combined.
  4. Fold in mini chocolate chips.
  5. Check the consistency. Add 1–2 teaspoons peanut butter or honey if too dry, or 1–2 tablespoons oats if excessively sticky.
  6. Cover and refrigerate for 20–30 minutes.
  7. Scoop approximately 1 tablespoon of mixture per ball.
  8. Gently roll between your palms.
  9. Arrange on a parchment-lined plate or tray.
  10. Chill until firm and serve.

Notes

For the easiest rolling, chill the mixture before shaping.
Natural peanut butter should be thoroughly stirred before measuring.
Store in an airtight container in the refrigerator for up to approximately 7 days or freeze for longer storage.
