Creamy Carbonara Buldak Ramen

Creamy Carbonara Buldak Ramen made with spicy Korean noodles, milk, Parmesan, mozzarella, butter, and egg yolk for an easy 15-minute meal.

Ingredients
  

  • 2 packages carbonara-flavored Buldak ramen
  • Spicy sauce packets included with ramen amount adjusted to taste
  • Carbonara seasoning packets included with ramen
  • 1/2 cup whole milk
  • 1/4 cup freshly grated Parmesan cheese
  • 1/3 cup shredded mozzarella cheese
  • 1 tablespoon unsalted butter
  • 1 large egg yolk
  • 1/2 cup reserved noodle cooking water as needed
  • 2 green onions thinly sliced
  • 1 teaspoon sesame seeds optional
  • Additional Parmesan for serving optional

Method
 

  1. Bring a medium pot of water to a boil.
  2. Add the ramen noodles and cook according to package directions, usually about 5 minutes, until tender but still slightly chewy.
  3. Reserve approximately 1/2 cup of the noodle cooking water.
  4. Drain the noodles and return them to the pot.
  5. Reduce the heat to low.
  6. Add the spicy Buldak sauce according to your preferred heat level.
  7. Add the carbonara seasoning packets and toss to coat the noodles.
  8. Pour in the whole milk and stir gently.
  9. Add the butter and stir until melted.
  10. Gradually add the Parmesan and mozzarella while tossing the noodles.
  11. Add 2–4 tablespoons of reserved noodle water and continue tossing until the sauce becomes smooth and creamy.
  12. Remove the pot completely from the heat and wait approximately 30 seconds.
  13. Add the egg yolk and immediately toss continuously until completely incorporated into the sauce.
  14. Add additional noodle water if necessary to loosen the sauce.
  15. Taste and add additional spicy sauce if desired.
  16. Transfer to serving bowls.
  17. Garnish with sliced green onions, sesame seeds, and optional Parmesan.
  18. Serve immediately.

Notes

Adjust the amount of spicy Buldak sauce according to your heat preference.
Reserve noodle water before draining.
Keep the heat low when adding milk and cheese.
Remove the pot completely from the heat before adding the egg yolk to reduce the risk of scrambling.
The sauce thickens quickly as it cools, so serve immediately.
Leftovers can be refrigerated for up to 2 days and gently reheated with a splash of milk.
Freezing is not recommended.
