Creamy French Onion Chicken Orzo Bake

Tender chicken, deeply caramelized onions, creamy orzo, thyme, Gruyère, and mozzarella baked together into an easy French-onion-inspired comfort-food dinner.

Ingredients
  

  • 1 1/2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
  • 3 large yellow onions thinly sliced
  • 1 1/2 cups dry orzo pasta
  • 1 cup freshly shredded Gruyère cheese
  • 1 cup shredded low-moisture mozzarella
  • 3 cups low-sodium chicken broth
  • 1/2 cup heavy cream
  • 4 garlic cloves minced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 tablespoon fresh thyme leaves plus extra for garnish
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon kosher salt divided, or to taste
  • 3/4 teaspoon freshly ground black pepper divided
  • 2 tablespoons chopped fresh parsley

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Pat the chicken dry and cut into approximately 1-inch pieces. Season with half of the salt and black pepper.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  4. Add the chicken in a single layer and cook for 4–5 minutes, turning occasionally, until lightly browned but not fully cooked.
  5. Transfer the chicken to a clean plate.
  6. Reduce the heat to medium-low and add the butter.
  7. Add the sliced onions with a small pinch of salt.
  8. Cook the onions for 25–35 minutes, stirring regularly, until very soft and deeply golden brown.
  9. If the bottom of the pan becomes too dark, add 1–2 tablespoons of water and scrape up the browned bits.
  10. Add the minced garlic and fresh thyme and cook for 30–60 seconds.
  11. Stir in the Worcestershire sauce and Dijon mustard.
  12. Add the dry orzo and stir through the caramelized onions for approximately 1 minute.
  13. Pour in the chicken broth and scrape the bottom of the skillet.
  14. Bring to a gentle simmer.
  15. Cook the orzo for approximately 5–6 minutes, stirring frequently. It should begin softening but remain slightly firm.
  16. Stir in the heavy cream.
  17. Return the browned chicken and any accumulated juices to the skillet.
  18. Stir gently to distribute the chicken throughout the orzo.
  19. Sprinkle the Gruyère naturally over the surface.
  20. Add the mozzarella.
  21. Transfer the skillet to the oven and bake for approximately 15–18 minutes.
  22. Check that the thickest chicken pieces have reached an internal temperature of 165°F (74°C) and that the orzo is tender.
  23. If desired, broil for 1–2 minutes until the cheese develops scattered golden-brown spots.
  24. Remove from the oven and rest for 5–10 minutes.
  25. Garnish with additional thyme and chopped parsley.
  26. Serve warm.

Notes

Do not rush the caramelized onions. Their deep golden color creates the signature French onion flavor.
Use a large oven-safe skillet so the recipe can move directly from the stovetop to the oven.
Do not fully cook the chicken during the initial browning stage because it will continue cooking in the oven.
The orzo mixture should still look slightly loose before baking because the pasta will continue absorbing liquid.
Stir the orzo frequently while simmering to prevent sticking.
Freshly shredded Gruyère and mozzarella provide the best melting texture.
Chicken should reach a safe internal temperature of 165°F (74°C).
Allow the finished casserole to rest for 5–10 minutes so the creamy sauce can thicken.
Add a splash of chicken broth when reheating leftovers because refrigerated orzo absorbs additional liquid.
Store properly refrigerated leftovers for 3–4 days.
