Creamy Overnight Oats with Chia and Almond Butter

Ingredients
  

  • ½ cup old-fashioned rolled oats
  • 1 tablespoon chia seeds
  • ½ cup milk of choice
  • ¼ cup plain Greek yogurt
  • tablespoons creamy almond butter
  • 1 –2 teaspoons pure maple syrup
  • ¼ teaspoon pure vanilla extract
  • ¼ teaspoon ground cinnamon
  • Tiny pinch fine salt
  • Optional Toppings
  • Sliced banana
  • Fresh strawberries blueberries, or raspberries
  • 1 teaspoon additional almond butter
  • Chopped almonds
  • Pumpkin seeds
  • Small drizzle maple syrup

Method
 

  1. Add rolled oats, chia seeds, cinnamon, and salt to a 12–16-ounce jar or food-storage container.
  2. Stir briefly to distribute the chia seeds.
  3. Add Greek yogurt and almond butter.
  4. Add maple syrup and vanilla.
  5. Pour in the milk.
  6. Stir thoroughly until the yogurt and almond butter are mostly incorporated.
  7. Check the bottom and corners for dry oats.
  8. Let the mixture stand for approximately 5 minutes.
  9. Stir again to break apart any chia clumps.
  10. Cover tightly.
  11. Refrigerate for at least 6 hours or overnight.
  12. Stir thoroughly in the morning.
  13. Add a splash of milk if a thinner consistency is desired.
  14. Top with fruit, nuts, or additional almond butter.
  15. Serve cold or gently warmed.

Notes

  • Old-fashioned rolled oats provide the best balance between softness and texture.
  • Stir the oats twice before refrigeration to prevent chia seeds from clumping.
  • Stir natural almond butter thoroughly before measuring.
  • Dairy or plant-based milk can be used.
  • Plain Greek yogurt produces an especially creamy texture.
  • Adjust maple syrup according to taste.
  • Add crunchy toppings immediately before serving.
  • For meal prep, refrigerate in sealed containers and enjoy within approximately 3–4 days for best texture.
