Creamy Overnight Peanut Butter Protein Oats

Thick and creamy peanut butter protein overnight oats made with rolled oats, Greek yogurt, chia seeds, peanut butter, milk, and protein powder for an easy make-ahead breakfast.

Ingredients
  

  • ½ cup old-fashioned rolled oats
  • ½ cup milk plus more as needed
  • cup plain Greek yogurt
  • 2 tablespoons creamy peanut butter
  • ½ scoop vanilla or unflavored protein powder approximately 15 g
  • 1 tablespoon chia seeds
  • 1 –2 teaspoons pure maple syrup to taste
  • ¼ teaspoon vanilla extract
  • ¼ teaspoon ground cinnamon optional
  • Tiny pinch fine salt
  • Sliced banana optional
  • Fresh berries optional
  • Chopped peanuts optional
  • Extra peanut butter optional

Method
 

  1. Add Greek yogurt, peanut butter, protein powder, maple syrup, vanilla, and milk to a 16-ounce jar or container.
  2. Stir thoroughly until mostly smooth and no large protein powder clumps remain.
  3. Add rolled oats and chia seeds.
  4. Add cinnamon and a tiny pinch of salt.
  5. Stir thoroughly, scraping the bottom and sides of the container.
  6. Cover tightly.
  7. Refrigerate for at least 6 hours or overnight.
  8. Stir thoroughly in the morning.
  9. If necessary, add 1–3 tablespoons additional milk until the desired consistency is reached.
  10. Add banana, berries, chopped peanuts, or another small spoonful of peanut butter if desired.
  11. Serve chilled or gently warmed.

Notes

Protein powders absorb different amounts of liquid, so adjust the milk after chilling as necessary.
Rolled oats provide the best texture.
For meal prep, refrigerate covered for up to 3–4 days.
Add crunchy toppings immediately before serving.
If your protein powder is already sweet, reduce or omit the maple syrup.
