Pat the chicken dry and season with paprika, Italian seasoning, salt, and black pepper.
Heat olive oil in a large skillet over medium-high heat and cook the chicken for 5 to 6 minutes per side until golden brown. Remove and set aside.
Reduce the heat to medium. Melt the butter and cook the garlic for about 30 seconds.
Pour in the chicken broth and heavy cream. Stir in the Parmesan cheese until smooth.
Add the spinach and sun-dried tomatoes and cook until the spinach wilts.
Return the chicken to the skillet and simmer for about 5 minutes until fully cooked.
Garnish with fresh basil and extra Parmesan before serving.
