  • Small rosemary sprig optional

  2. Cut one thin fresh apple slice for garnish.
  3. Pour 3 ounces chilled apple cider into a champagne flute or stemmed wine glass.
  4. Slowly add 3 ounces chilled sparkling wine.
  5. Pause if necessary to allow the foam to settle.
  6. Stir once very gently if needed.
  7. Add a tiny pinch of cinnamon if desired.
  8. Garnish with the fresh apple slice.
  9. Add a cinnamon stick or small rosemary sprig if desired.
  10. Serve immediately while bubbly.

Notes

  • Use chilled ingredients so ice isn't necessary.
  • A dry sparkling wine helps balance naturally sweet cider.
  • Pour sparkling wine slowly to prevent overflowing.
  • Avoid vigorous stirring because it releases carbonation.
  • Ground cinnamon is optional and should be used sparingly.
  • Prepare immediately before serving for the best bubbles.
  • For a non-alcoholic version, replace sparkling wine with non-alcoholic sparkling wine or sparkling water.
  • Scale the recipe as needed while maintaining approximately equal parts cider and sparkling wine.
