Ingredients
  

  • 1 sheet frozen puff pastry thawed
  • 4 oz cream cheese softened
  • 4 oz fresh mozzarella thinly sliced
  • 2 medium tomatoes thinly sliced
  • 1 cup cherry tomatoes halved
  • 1/4 cup grated Parmesan cheese
  • 1 garlic clove minced
  • 1 teaspoon Italian seasoning
  • 1 tablespoon extra virgin olive oil
  • Salt and black pepper to taste
  • Fresh basil for garnish
  • 1 large egg
  • 1 tablespoon water

Method
 

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the puff pastry into six rectangles and lightly score a border around each piece.
  3. Mix the cream cheese with minced garlic and spread inside each pastry border.
  4. Top with mozzarella, sliced tomatoes, cherry tomatoes, Parmesan, and Italian seasoning.
  5. Season with salt and black pepper.
  6. Whisk the egg with water and brush the exposed pastry edges.
  7. Bake for 20–25 minutes until puffed and golden brown.
  8. Drizzle lightly with olive oil and garnish with fresh basil and additional Parmesan before serving.
