Method
- Preheat oven to 425°F (220°C).
- Line a large baking sheet with parchment.
- Roll pizza dough to approximately ¼-inch thickness.
- Cut 10–12 approximately 3-inch circles.
- Transfer dough rounds to the baking sheet.
- Brush exposed edges lightly with olive oil.
- Sprinkle edges lightly with Italian seasoning and garlic powder.
- Spread about 2 teaspoons pizza sauce over each round, leaving a border.
- Add a modest layer of mozzarella.
- Cut pepperoni into triangular eyes and noses and crooked mouth shapes.
- Arrange the pepperoni pieces over the mozzarella to create jack-o'-lantern faces.
- Add tiny green bell pepper stems if desired.
- Bake for 8–10 minutes, until cheese is melted and crust edges are golden.
- Cool for 2–3 minutes.
- Serve warm.
Notes
Avoid excessive sauce or the mini pizzas may become soggy. Low-moisture mozzarella works best. Keep the cheese layer relatively thin so the jack-o'-lantern faces remain visible after melting. Cut the pepperoni decorations before assembling the pizzas to make preparation faster. Watch closely during the final few minutes because mini pizzas bake quickly.
