Ingredients
  

  • 6 large burrito-size flour tortillas
  • 8 large eggs
  • 1 lb lean ground turkey
  • 1 cup black beans drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1/2 cup plain Greek yogurt
  • 1 bell pepper diced
  • 1/2 medium onion diced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Salsa optional
  • Fresh cilantro optional
  • Avocado optional for serving
  • Hot sauce optional

Method
 

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the ground turkey and season with cumin, smoked paprika, garlic powder, salt, and black pepper. Cook until browned and completely cooked through.
  3. Add the diced bell pepper and onion and cook for 3–4 minutes until slightly softened. Transfer the mixture to a bowl.
  4. Whisk the eggs and add them to the skillet over medium heat. Cook gently until softly scrambled.
  5. Stir the drained black beans into the cooked turkey mixture and warm briefly.
  6. Warm the tortillas until flexible.
  7. Spread a little Greek yogurt down the center of each tortilla.
  8. Divide the scrambled eggs, turkey mixture, black beans, and shredded cheese evenly between the tortillas.
  9. Add salsa or hot sauce if desired.
  10. Fold the sides of each tortilla inward and roll tightly.
  11. Optional: Place the burritos seam-side down in a clean skillet and toast for 1–2 minutes per side until lightly golden.
  12. Serve warm with your favorite toppings.
