Lemon Tiramisu

Ingredients
  

  • For the Lemon Syrup:
  • 1/2 cup fresh lemon juice
  • 1/2 cup water
  • 1/3 cup granulated sugar
  • 1 teaspoon finely grated lemon zest
  • For the Mascarpone Cream:
  • 16 oz 450 g mascarpone cheese, cold
  • 1 1/2 cups 360 ml cold heavy whipping cream
  • 3/4 cup 90 g powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon finely grated lemon zest
  • For Assembly:
  • About 24 crisp ladyfingers
  • 3/4 cup lemon curd
  • Fresh lemon zest for garnish
  • Thin lemon curls optional

Method
 

  1. Combine the lemon juice, water, granulated sugar, and lemon zest in a small saucepan.
  2. Heat over medium heat, stirring until the sugar dissolves.
  3. Simmer gently for approximately 2 minutes, then remove from the heat and cool completely.
  4. Place the mascarpone in a large bowl and mix briefly until smooth.
  5. In a separate cold bowl, whip the heavy cream, powdered sugar, and vanilla until medium-stiff peaks form.
  6. Gently fold the whipped cream into the mascarpone in several additions.
  7. Fold in the fresh lemon zest.
  8. Pour the cooled lemon syrup into a shallow dish.
  9. Quickly dip each ladyfinger into the syrup for approximately 1 second per side.
  10. Arrange one layer of dipped ladyfingers across the bottom of an 8 × 8-inch dish.
  11. Spread half of the mascarpone cream over the ladyfingers.
  12. Spoon a thin layer of lemon curd over the mascarpone.
  13. Add another layer of quickly dipped ladyfingers.
  14. Spread the remaining mascarpone cream over the top.
  15. Cover and refrigerate for at least 6 hours, preferably overnight.
  16. Before serving, garnish with fresh lemon zest and optional thin lemon curls.
  17. Slice into squares and serve chilled.
