Method
- Preheat oven to 400°F (205°C).
- Lightly grease an approximately 8-inch baking dish.
- Stir softened cream cheese until smooth.
- Mix in Greek yogurt.
- Add buffalo sauce and stir until evenly combined.
- Add ranch seasoning, garlic powder, onion powder, smoked paprika, and black pepper.
- Fold in shredded chicken.
- Fold in ¾ cup shredded cheddar.
- Add most of the sliced green onions.
- Taste and add salt only if necessary.
- Spread mixture into prepared baking dish.
- Sprinkle remaining ½ cup cheddar unevenly over the surface.
- Bake uncovered for 18–22 minutes until hot and bubbling.
- Broil for approximately 1–2 minutes, watching constantly, until scattered areas of cheese become golden and crispy.
- Remove from oven and rest for 5 minutes.
- Finish with remaining green onions.
- Serve warm with vegetables, tortilla chips, crackers, or toasted pita.
Notes
Use thick Greek yogurt to prevent a watery dip.
Freshly grated cheddar melts and browns particularly well.
Don't make the cheese topping excessively thick if you want crispy browned areas.
Watch the dip constantly while broiling.
Store leftovers refrigerated for 3–4 days.
