Method
- Preheat oven to 425°F (218°C).
- Butter two 6-ounce ramekins thoroughly and dust the interiors lightly with cocoa powder.
- Gently crush 6–8 raspberries with a fork into a thick, chunky mixture. Remove excess liquid if necessary.
- Finely chop the dark chocolate.
- Melt chocolate and 2 tablespoons butter together in short microwave intervals, stirring frequently until smooth.
- Cool the chocolate mixture for 2–3 minutes.
- Whisk the egg, egg yolk, sugar, and vanilla for 45–60 seconds until slightly lighter and foamy.
- Gradually whisk in the melted chocolate mixture.
- Fold in flour and salt just until combined.
- Divide approximately half the batter between the two prepared ramekins.
- Place about 1 heaping teaspoon crushed raspberry mixture in the center of each.
- Cover completely with remaining chocolate batter.
- Place ramekins on a small baking sheet.
- Bake for approximately 9–11 minutes, until the edges are set but the centers remain soft.
- Rest for 1 minute.
- Carefully loosen the edges if necessary and invert onto serving plates.
- Garnish with remaining fresh raspberries and a light dusting of powdered sugar if desired.
- Serve immediately while the centers are molten.
Notes
Use 6-ounce ramekins for the most predictable baking time.
Begin checking the cakes around 9 minutes.
Keep the raspberry mixture in the center of the batter.
The cakes should have set edges with softer centers when removed from the oven.
Don't wait for the entire surface to become firm.
Serve immediately for the best molten center.
The assembled unbaked cakes can be refrigerated ahead of time, although chilled batter may require slightly longer baking.
