Preheat the oven to 350°F (175°C).
Line a 9 × 13-inch baking pan with parchment paper.
Combine the flour, rolled oats, brown sugar, cinnamon, and salt.
Pour in the melted butter and mix with a fork until irregular crumbs form.
Reserve approximately 2 cups of the crumble mixture.
Press the remaining mixture firmly into the prepared pan.
Bake the crust for 10 minutes.
Place the prepared apples in a large bowl.
Add brown sugar, maple syrup, cinnamon, nutmeg, lemon juice, cornstarch, and vanilla.
Toss until the apples are evenly coated.
Spread the apple mixture over the warm crust.
Mix the chopped pecans into the reserved crumble mixture.
Scatter the pecan crumble evenly over the apples without pressing it down.
Bake for 35–40 minutes until the topping is golden and the apple filling bubbles gently around the edges.
Cool completely in the pan.
For cleaner slices, refrigerate for approximately 30 minutes after cooling.
Lift from the pan using the parchment paper and cut into 20 bars.
