Place the cooked chicken in a bowl and mix with the garlic powder, paprika, and a small pinch of salt.
Place one small flour tortilla flat on a clean surface.
Sprinkle shredded cheese over one half of the tortilla.
Add a small amount of seasoned chicken.
Sprinkle additional cheese over the chicken.
Fold the tortilla in half.
Repeat with the remaining tortillas.
Heat a large nonstick skillet over medium heat and add a small amount of olive oil or butter.
Cook 1–2 quesadillas at a time for 2–3 minutes on the first side.
Flip and cook for approximately 2 minutes more, until lightly golden and the cheese is melted.
Transfer the cooked quesadillas to a cutting board and cool for 5 minutes.
Cut each quesadilla into 2–3 small wedges.
Divide the quesadilla wedges between four lunch boxes.
Add preferred fruit, vegetables, crackers, and a small separate portion of salsa or sour cream.
Keep refrigerated until packing.
Use an insulated lunch bag with a frozen ice pack when refrigeration is unavailable.
