Method
- Preheat oven to 350°F (175°C) and lightly grease a 9 × 9-inch baking dish.
- Combine oats, cinnamon, ginger, nutmeg, cloves, baking powder, and salt.
- In another bowl, whisk pumpkin puree and eggs.
- Whisk in maple syrup and brown sugar.
- Gradually add milk.
- Whisk in melted butter and vanilla.
- Pour the pumpkin mixture over the oats and stir thoroughly.
- Rest for 5 minutes.
- Fold in about two-thirds of the pecans.
- Transfer to the prepared baking dish.
- Scatter remaining pecans and optional brown sugar over the top.
- Bake for 35–42 minutes until the edges are set and the center is moist but no longer liquid.
- Rest for 10–15 minutes before slicing.
- Serve warm with your favorite toppings.
Notes
Use pure pumpkin puree, not pumpkin pie filling.
Old-fashioned rolled oats provide the best texture.
Don't overbake—the center should remain pleasantly moist.
For a less-sweet version, omit the brown sugar.
