Open the cinnamon rolls and reserve the icing.
Cut each unbaked cinnamon roll into four pieces.
Scatter the pieces evenly throughout the baking dish without tightly packing them.
Whisk eggs, heavy cream, vanilla, cinnamon, brown sugar, maple syrup, and salt.
Pour the mixture evenly over the cinnamon-roll pieces.
Sprinkle with chopped pecans if using.
Rest for 5–10 minutes.
Bake uncovered for 25–35 minutes, until puffed and golden and the center is fully set.
Cover loosely with foil if the top browns before the center finishes baking.
Cool for 5–10 minutes.
Drizzle with the reserved icing.
Serve warm.
