Turkey & Cheese Pinwheel Lunch Box

Easy Turkey & Cheese Pinwheels made with soft tortillas, turkey, cheddar, cream cheese, and lettuce for a simple kid-friendly school lunch box.

Ingredients
  

  • 4 large soft flour tortillas
  • 8 tablespoons cream cheese softened
  • 8 oz thinly sliced deli turkey
  • 8 thin slices cheddar cheese
  • 1 cup crisp lettuce washed and thoroughly dried
  • Optional Lunch Box Sides:
  • Fresh strawberries
  • Seedless grapes
  • Cucumber slices
  • Crackers

Method
 

  1. Place one flour tortilla flat on a clean work surface.
  2. Spread approximately 2 tablespoons softened cream cheese evenly over the tortilla, leaving a small border around the edge.
  3. Arrange a thin layer of sliced turkey over the cream cheese.
  4. Place 2 thin slices of cheddar over the turkey.
  5. Add a small amount of completely dry lettuce.
  6. Starting from one side, roll the tortilla tightly into a compact log.
  7. Repeat with the remaining tortillas and filling.
  8. Wrap the tortilla rolls and refrigerate for approximately 15–20 minutes to firm.
  9. Trim the uneven ends with a sharp knife.
  10. Slice each roll into approximately 1-inch pinwheels.
  11. Place 4–6 pinwheels into each lunch box.
  12. Add strawberries, grapes, cucumber slices, crackers, or other preferred sides.
  13. Keep refrigerated until packing and use an insulated lunch bag with a frozen ice pack when refrigeration is unavailable.
