Sheet Pan Pork Chops with Potatoes & Broccoli

Ingredients
  

  • 4 boneless pork chops about 1 inch thick
  • 1 1/2 lb baby potatoes halved
  • 4 cups broccoli florets
  • 3 tablespoons olive oil divided
  • 1 tablespoon Dijon mustard
  • 3 cloves garlic minced
  • 1 1/2 teaspoons smoked paprika divided
  • 1 teaspoon garlic powder
  • 1 1/2 teaspoons Italian seasoning divided
  • 1 teaspoon salt divided, plus more to taste
  • 1/2 teaspoon black pepper divided
  • Fresh lemon wedges optional
  • Fresh parsley optional

Method
 

  1. Preheat the oven to 425°F (220°C).
  2. Line a large rimmed sheet pan with parchment paper or lightly grease it.
  3. Place the halved potatoes on the pan.
  4. Drizzle with about 1 1/2 tablespoons olive oil and season with part of the smoked paprika, garlic powder, Italian seasoning, salt, and black pepper.
  5. Toss well and arrange the potatoes cut-side down when possible.
  6. Roast the potatoes for 15 minutes.
  7. Meanwhile, pat the pork chops dry.
  8. Mix the remaining olive oil with Dijon mustard, garlic, remaining smoked paprika, Italian seasoning, salt, and black pepper.
  9. Rub the seasoning mixture over both sides of the pork chops.
  10. Toss the broccoli florets with a small amount of olive oil, salt, and pepper.
  11. Remove the sheet pan from the oven.
  12. Push the potatoes toward one side and place the pork chops in the center.
  13. Arrange the broccoli around the pork.
  14. Return the pan to the oven and roast for 12–18 minutes, until the pork reaches an internal temperature of 145°F (63°C).
  15. Transfer the pork chops to a plate and rest for 3–5 minutes.
  16. If needed, return the potatoes and broccoli to the oven for another 3–5 minutes for additional browning.
  17. Serve with fresh lemon and parsley if desired.
